1 cup of white rice (preferably short or medium-grain)
4 cups of water (use filtered water for optimal taste)
1 tsp of vanilla extract (optional)
Sweetener to taste (options include maple syrup, agave nectar, or sugar)
Instructions
Rinse the Rice: Place 1 cup of rice in a fine-mesh strainer and rinse it under cold water until the water runs clear.
Cook the Rice: In a saucepan, combine the rinsed rice and 4 cups of water. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes.
Blend the Mixture: Transfer the rice and any remaining water to a blender. Add the vanilla extract and sweetener, if using. Blend on high for about 1-2 minutes until smooth and creamy.
Strain the Rice Milk: Using a nut milk bag, fine cheesecloth, or a clean dish towel, strain the blended rice mixture into a large bowl or pitcher.
Store the Rice Drink: Pour the creamy rice drink into a sealed container and refrigerate. It can be stored for up to 4-5 days.
