A delightful concoction that marries the tropical sweetness of ripe mangoes with a creamy texture that tantalizes the taste buds. These popsicles are not just a dessert; they embody summer, bringing a taste of the tropics to every bite.
Ingredients
Scale:
3 large ripe mangoes (about 3 cups of mango puree)
1 cup coconut milk (full-fat for creaminess)
2-3 tablespoons honey or maple syrup (adjust to taste)
2 tablespoons freshly squeezed lime juice
A pinch of salt
6-8 plastic cups for freezing
6-8 popsicle sticks
Instructions
Start by peeling the mangoes and removing the pit. Cut the flesh into chunks and place them in a blender.
Add the coconut milk, honey (or maple syrup), lime juice, and a pinch of salt to the blender with the mango pieces. Blend until the mixture is completely smooth.
Taste the mango mixture and adjust the sweetness if needed by adding more honey or maple syrup.
Pour the creamy mango mixture into the plastic cups, filling each about three-quarters full.
Insert a popsicle stick into the center of each cup.
Place the cups in the freezer and allow them to freeze for at least 4-6 hours, or until completely solid.
To remove the popsicles from the cups, run warm water over the outside of the plastic cups for a few seconds. Gently pull on the stick.
Serve immediately and enjoy the refreshing taste of your homemade Creamy Mango Popsicles!
