2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon granulated sugar
½ cup unsalted butter, cold and cut into cubes
¾ cup buttermilk (or milk with 1 tablespoon vinegar added)
2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)
¼ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 tablespoon lemon juice
1 tablespoon cornstarch
¼ cup granulated sugar (for topping)
1 teaspoon ground cinnamon (for topping)
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir until well coated and set aside.
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar. Add the cold butter cubes and mix until it resembles coarse crumbs.
Pour in the buttermilk and stir gently with a fork until just combined.
Turn the dough out onto a floured surface. Knead gently a few times and roll out to about ½-inch thickness.
Use a round cutter or glass to cut out circles from the dough. Gather scraps, re-roll, and cut out additional biscuits.
Place half of the dough circles on the prepared baking sheet. Spoon a tablespoon of apple filling onto each circle and top with remaining dough circles, sealing edges.
Melt a small amount of butter and brush it over the tops of the biscuits. Sprinkle with sugar.
In a small bowl, mix together granulated sugar and cinnamon. Sprinkle over the top of the biscuits.
Bake for 15-20 minutes or until golden brown. Allow to cool slightly before serving.
