Cheeseburger Quesadilla Bake

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, add the ground beef along with the diced onion. Cook until the beef is browned and the onions are translucent, about 5-7 minutes.
  3. Stir in the minced garlic, chili powder, cumin, salt, and pepper. Cook for an additional 2 minutes until fragrant.
  4. On a clean surface, lay out four tortillas. Divide the cooked beef mixture evenly among them. Sprinkle shredded cheese generously over the beef, and add diced pickles if using.
  5. Place the remaining four tortillas on top of the cheese layer. Press down gently to compact the quesadillas.
  6. Carefully transfer the quesadillas to a greased baking sheet. Brush the tops lightly with oil.
  7. Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the tortillas are golden brown and the cheese is melted.
  8. Once baked, remove from the oven, sprinkle with additional cheese, and let cool for a few minutes. Cut into wedges, garnish with chopped parsley or cilantro, and serve.
