Ingredients

4 medium-sized russet potatoes
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 tablespoons olive oil
1 cup shredded cheese (cheddar, mozzarella, or your preference)
8 slices of deli meat (turkey, ham, or roast beef)
1/2 cup cooked bacon bits (optional)
Chopped green onions or chives for garnish (optional)
Instructions
Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes thoroughly, then cut them into thin slices, about 1/8 inch thick.
In a large bowl, combine the potato slices with salt, black pepper, garlic powder, onion powder, and olive oil. Toss until evenly coated.
On a baking sheet lined with parchment paper, arrange the seasoned potato slices in a single layer, overlapping slightly.
Place the baking sheet in the oven and bake for 25-30 minutes, or until the potato slices are golden brown and crispy.
Remove the potato crust from the oven and let it cool for a few minutes. Layer the shredded cheese and deli slices evenly over the baked potato crust.
Carefully roll the potato crust starting from one end, creating a tight roll.
Place the rolled-up potato crust back on the baking sheet, seam side down, and return it to the oven for an additional 10-15 minutes.
Allow the baked potato roll-ups to cool for a few minutes, then slice them into bite-sized pieces and garnish with chopped green onions or chives if desired.
