1 ½ cups graham cracker crumbs
1/3 cup granulated sugar
1/2 cup unsalted butter, melted
3 cups apples, peeled, cored, and diced (about 3-4 medium apples)
1/2 cup granulated sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
1 tablespoon cornstarch
2 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
Instructions
Preheat your oven to 325°F (160°C). Line a 9x13-inch baking dish with parchment paper.
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish. Bake for 10 minutes until set.
In a large bowl, toss the diced apples with sugar, cinnamon, lemon juice, and cornstarch. Set aside for at least 10 minutes.
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sugar, followed by the eggs one at a time, mixing well after each addition. Stir in the vanilla and ground cinnamon.
Pour the cheesecake filling over the pre-baked crust and spread it out evenly. Layer the apple filling over the cheesecake layer.
Bake for 45-50 minutes, until the edges are set and the center is slightly jiggly.
Let cool at room temperature for about an hour. Refrigerate for at least 4 hours or overnight.
Once chilled, lift the bars out of the dish and slice into squares. Serve with caramel sauce or whipped cream if desired.
