  1. Preheat your oven to 325°F (160°C). Line a 9x13-inch baking dish with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish. Bake for 10 minutes until set.
  3. In a large bowl, toss the diced apples with sugar, cinnamon, lemon juice, and cornstarch. Set aside for at least 10 minutes.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sugar, followed by the eggs one at a time, mixing well after each addition. Stir in the vanilla and ground cinnamon.
